Next, carefully remove the gourd section from the pan. At this point, I use my exacto knife to slice it on one side only. Don't try to cut 4 inch sections, if the gourd is going to crack, it will do so where it wants to, not necessarily where you want it to. |

The gourd shell should be soft enough to open up to a point where you can place the spoon in it to hold it open, not flat yet, but nice and open. |

Wedge the spoon into place, the shell should have enough spring to it to clamp itself onto the spoon.
(This can all be done with or without the tea brewing in the background :-) |

Place the gourd with the spoon wedged in it, back into the hot water. |

make sure it is submerged as much as possible, then place the plate back on top and let it simmer for another hour. |
